For the spiced apple compote (yield: 4 to 6 servings):
Prepare the compote in advance:
In a saucepan, melt the butter, add the apples and sauté for 2 minutes. Add the brown sugar, cinnamon, cloves, nutmeg, lemon juice and water. Cook over low heat until the apples are soft and the syrup is slightly thickened (about 10 to 15 minutes). Let cool and refrigerate until ready to assemble.
